Soups, Gumbos and Stews!!

Since getting a my  new subscription to Southern Living magazine I've been on a cooking frenzy!
I'm currently on a soup/stew kick and love it. Not only are these yummy options for meals but they are also great to freeze for Andrew's future lunches.

Try these out for your next cold weather weekend!!

Homemade Gumbo

4 Chicken Breasts
1/2 lb. of Spicy Italian Sausage
1 can of diced tomatoes - or 1 large tomato
2 cloves of garlic
1 onion
1 cup of instant brown rice
1 green, or red, pepper
3 cups of water
1 "Ramen Chilli" packet  (minus the noodles)
** For $0.25 it's a great seasoning packet **

Saute the chicken with both cloves of garlic over olive oil and salt & pepper.
Chop it up into small bits once cooked.
Brown the sausage.
Dice onion and pepper.
Combine all ingredients and slow cook for 4 hours.






Homemade Italian Wedding Soup

1 lb of Spicy Italian Sausage
1 cup of Whole Milk
1 can of Cannelloni Beans
1 Can of Diced Tomatoes - or 1 Large Tomato
3 cups of fresh spinach
1 can of Cream of Chicken Condensed Soup - or 1 cup of Heavy Cream
1 teaspoon of Parsley
1 teaspoon of Basil (if you like the taste of Basil)
5 Large Red Skin Potatoes
1 Medium Red Onion
1 Teaspoon Salt
1 Teaspoon Pepper
1 clove of garlic
1 tablespoon of butter

Brown the sausage and dice your pepper, onion & garlic. 
Combine all ingredients, except your spinach, into a crock pot and slow cook for 4 - 5 hours.
Add your spinach approximately 30 minutes before serving.
